Hot coffee doesn't thrill me at all. I always think it smells better than it tastes. But when it comes to a lush, iced coffee of some kind, I'm there. I really love iced frappuccino style of drinks, and they are unbelievably easy to make at home. And when the weather is as gorgeous as it has been lately, there is no better time to experiment with iced coffees.
There are loads of ways you can give iced coffees a go in a vegan version. But for a simple recipe that will be pretty simple for most people to put together. as long as they own a blender, this is as easy as they come. And effective! With the blender, you still get a nice froth on the top while the drink remains chilled.
Iced Mocha Vanilla Frappuccino
Serves two
1 cup / 250ml strong coffee (make warm, but then leave to cool)
1 cup / 250ml almond milk
3 tablespoons vegan dark chocolate flakes or shavings, plus extra for garnish
1 tablespoon sugar syrup (eg. maple syrup, agave nectar, Golden Syrup)
½ teaspoon vanilla extract
5-6 large ice cubes
1. Make a strong coffee in your preferred way (fresh or instant), then while warm, stir in and dissolve the chocolate flakes and sugar syrup. Leave the coffee to cool in the fridge.
2. When the coffee is cool or chilled, add to a blender with the ice and vanilla extract, then blend until frothy and smooth. Pour into latte glasses, and serve with a chocolate shavings garnish.
What a brilliant idea to make frappuccino in a blender! I don't drink coffee - hot or cold - but the ingredient list sounds too good not to be tempted;) I've tried chocolate + coffee in cake form and loved the combo. Will definitely give this a go and let you know how it turns out.

I tried it this morning with soy milk and without the chocolate and it came out as a cold caramel milk, delicious but it didn't have that milkshake texture…
Then i tried it again tonight with about twice the amount of ice and it was Amazing! Just like a real frappuccino! Thank you!
