Oh my! I have been trying out various vegan mayo recipes for a while, and haven't yet been altogether satisfied. I have been using commercial vegan mayonnaises such as Granovita Mayola (which admittedly, is my favourite ready-made vegan mayo), but I'm very much all about making my food myself, wherever I can. And also, the fat content of most shop-bought mayonnaises (just like the standard egg mayos) can be rather on the high side.
So how pleased I am to have stumbled upon Susan Voisin's recipe, from her fabulous blog Fat Free Vegan Kitchen! This recipe is so yum and extremely versatile! My version here is a very slight variation on Susan's Tofu-Cashew Mayonnaise, and I do mean slight. My only addition is a small amount of black salt, which gives a little more egginess to the mayonnaise with its sulphuric smell and taste. And I used Dijon mustard too, as I like the flavour and smell.
Here are the ingredients as per Susan's recipe and including my additions. According to Susan, this recipe keeps in the fridge for about 2-3 weeks. I'm not sure if I will get to find out if my first batch will last that long, as I am having a birthday party for my son this weekend and will be making a fresh potato salad with it.
Of course, with the cashews, this recipe is not fat-free, but it is a helluva lot less fat than any standard mayo, vegan or otherwise. You can see Susan's page for the comparisons.
Delicious Low-Fat Vegan Mayonnaise
395g / 12.3oz package firm silken tofu (I used Mori Nu Silken Firm Tofu)
½ cup raw cashews
3 tablespoons lemon juice
1 teaspoon prepared mustard (I used Dijon)
⅛ teaspoon granulated onion powder
¼ teaspoon black salt / kala namak

Sorry Elizabeth, at the moment I can't find a way to do this but I am looking into it. For now you will just need to copy and paste into a word document!
