Today's breakfast. And it is so yummy, healthy, and easy to make! This fruit smoothie makes a perfect start to the day.
It contains omega-3 from the seeds, huge amounts of vitamin C from the pineapple, and B6 and potassium from the bananas. As well as plenty of fibre, calcium from the figs and almond, and the fortified coconut milk gives you about a third of your B12 and vitamin D needs for the day (and calcium too).
Pina Colada Breakfast Smoothie
1 cup/165g fresh pineapple
1 medium banana
2 dried figs
1 tbsp hemp seeds
1 tbsp ground flaxseed (linseed)
2 tbsp coconut flour or desiccated coconut
1 tbsp ground almonds
1 cup/200ml vitamin-fortified coconut milk (I use Kara)
1. Whizz the seeds together in the blender alone, then add the other dry ingredients and whizz again.
2. Add the banana, figs and pineapple and half the milk. Blend until the figs are well-blended in.
3. Add the remaining milk. Blend, and serve.
