Been pretty much absent from work and home for the last two weeks since I've been in Dublin and then in Anglesey, Wales. Dublin was a holiday/press trip, and Anglesey was just a holiday. Both were fab, but I didn't half eat well in Dublin! In fact, I can safely say that I did indeed eat my way around the city!
In Dublin I tried a 'boxty' - which is like like a potato pancake (similar to a Staffordshire oatcake if you've ever tried them) and was stuffed with steak medallions and portobello mushroom cream sauce. Oh yum!
We also ate out in a couple of very trendy restaurants that were just delightful, especially one place called Eden where my starter was one of the best things I've tasted - a duck liver terrine with corn breads and a tomato & cardamom relish & baby leaf salad.
Anglesey was much more a self-catering affair although included the quintessential supper of any seaside holiday - fish & chips. And all I can say is thank the lord I was going on coastal walks for up to 3 to 4 hours a day, because intuitive eating was the last thing on my mind in Dublin, I have to admit. I broke all the 'rules' and didn't pay very much attention at all to being mindful.
Ah well, am home now and trying to get back to normal.
