
Okay - I know I should have taken the photograph before I started eating my lunch, but I only remembered I wanted to after I was a few bites in! So, excuse the fact that the food is splodged around the plate a bit (oh I'm such a Nesbitt), but you get the gist of what it looked like before I started scoffing!
Now this lunch has become one of my favourites lately. I recently discovered Carotino Red Palm & Canola Oil and have been throwing it all over my salads, but I came up with this baby spinach salad which I just can't stop eating. I've now called it 'Rusty' baby spinach, Parmesan & pine nut salad because of the lovely red colour of the oil.
It's not a difficult recipe - I just use a handful of baby spinach leaves, some chopped spring onion, a sprinkle of pine nuts, and some grated Parmesan, then generously douse with the Red Palm & Canola Oil. Today I ate it with my other current favourite - Asda Extra Special Prawn Cocktail - and some coleslaw with feta cheese!
I was really satisfied, and I ate quite late - 3pm - but for some reason, I've just had to stuff a handful of nuts in my mouth because I started to feel hungry, though couldn't quite work out if I was or not. Could it be the overload of booze last night sending my blood sugar everywhere? I have to admit, I just ate the nuts without thinking or waiting to check out my hunger - so not being particularly intuitive today.
The process is a long one, and one that I always have to be mindful about (or old habits slip back in!).
